Then use a spray bottle to get a little water in the pan and clap the lid back on. (Steam is your friend in cooking most things!) 1.5 to 2 minutes later, uncover, slap the ‘za on a plate, burn your fingers and tongue on it because it’s hot and delicious!
Preheat the pan between medium and high heat—closer to medium, though. Slip your pizza in, cover with lid, let it heat up—about four minutes on my stove, YMMV.
